As part of our 21 and Over Ice Cream Series , we are diving into one of our most popular adult-friendly flavors. It’s a sophisticated, "top-shelf" treat designed specifically for coffee lovers who want a little extra kick in their scoop. Real Spirits, Real Ingredients At Pecan Jacks, we don’t believe in imitation. When we say a flavor is spirited, we mean it. For this specialty batch, we use the real deal: Kahlúa . But we didn't stop there. To ensure the coffee notes are as authentic as possible, we partnered with our friends at Lucky Goat Coffee . They created a special blend just for us, which we grind super fine in-house to create a flavor profile that is bold, aromatic, and perfectly balanced. Why "Spirited" is Better than "Boozy" There is a big difference between "boozy" ice cream and spirited ice cream. Many shops simply take a standard base and crank up the alcohol until it burns. At Pecan Jacks, we are professionals in the art of the infusion. The Balance: We use the alcohol to boost the existing flavor notes—like the rich caramel and deep roasted coffee—without the harsh "burn" of raw spirits. Made In-House: Every scoop is made right at your local Pecan Jacks location. It’s fresh, creamy, and intentionally crafted. The "Pick-Me-Up": As Tim says, this flavor will "pick you up and slow you up at the same time." It’s the ultimate late-night indulgence. At Pecan Jacks, we're famous for the variety of flavors that keep lines out the door, and nowhere is that more true than with our unique 21 & Over Ice Cream Series . It's our little secret for the grown-ups who are looking for a special, sophisticated treat. In this series, VP of Growth Cory Mosley and Co-Founder Tim Wyatt delve into the details of one of our original and most beloved adult flavours: Limoncello Ice Cream . A Bright, Smooth Summer Staple Our Limoncello ice cream is the perfect answer for those craving a bright, creamy, and refreshing dessert. "Limoncello is very bright. It is perfect for summertime when you want a little after-dinner something special ," explains Tim Wyatt. We craft this flavor using Parnelli Limoncello , resulting in a dessert that is: Real Mild: It's not overly strong, but delivers a pleasant, subtle lift. Bright Lemon Hit: The citrus flavor hits the palate just right. Super Smooth Texture: Like all Pecan Jacks ice creams, it is incredibly smooth, never "crystally," and avoids the scratchy texture often associated with lower-quality ice cream. This flavor has been a staple in the Pecan Jacks lineup since our very first week, proving its appeal to customers right from the start. The (Boozy) Batch That Started It All The Limoncello flavor has a great story about a memorable customer and a slightly-too-spirited first batch. Tim recalls the early days of crafting the recipe: "Grandpa came in... he sees Limoncello on the board... I give him a sample, and he goes, 'Oh, man.'" The problem? It was the very first batch, and we were still perfecting the measurements. Tim admitted to cracking open three bottles of Limoncello in that first batch to get the flavor profile right. "It was way too strong... The next week, I had to make more. But grandpa got two scoops... and the kids are just buzzing [from the sugar], and he's sitting there, and he's just as happy as he can be. I said, 'You doing okay?' He said, 'You know what? I think I got a little buzz off of that ice cream! We promptly worked on that recipe until it was perfected to be just right—a bright, delicious flavor that delivers an indulgence, not a buzz!

At Pecan Jacks, we believe in bringing a little Southern sophistication to our sweet indulgences. While our handcrafted chocolates and classic ice creams bring smiles to all ages, we have a special line of flavors just for the grown-ups: our 21 & Over Ice Cream Series . In this edition, Cory Mosley, VP of Growth, and Co-Founder Tim Wyatt are diving into the story behind our undisputed champion of the spirited line: the Maker's Mark Bourbon Praline Ice Cream . It Starts with the Praline (or Praline) The foundation of this legendary flavor is our famous bourbon praline. (And yes, whether you say "pecan" or "pecan," or "praline" or "praline," we love you all the same—just don't correct us when we answer the phone with Pecan Jacks! ). The bourbon praline itself has a delightful origin story, courtesy of Co-Founder Tim Wyatt’s son, Dustin White. "As he came of age, he said, ‘Dad, you got to do Maker's Mark Bourbon Praline, it's the rave!’" Tim recalled. "I don't drink, so I said, 'Okay, we'll give it a try.' And we came up with a recipe for it. It became very famous up and down the East Coast, going out to festivals." The Delicious Double Dose of Bourbon The transition from a famous candy to a signature ice cream was a natural, and delightfully bold, move.  To create the ice cream, we take those perfect bourbon pralines and chop them into a caramelized, crunchy crumble . This crumble is then mixed into the creamy base, giving it a texture similar to a butter pecan or pralines and cream. Even after cooking, you still get a rich, authentic flavor from the Maker's Mark. But Pecan Jacks doesn't stop there. To ensure the flavor truly sings , we then add more Maker’s Mark bourbon directly into the ice cream batch itself. Because what’s better than a little Maker’s? A lot more Maker's! This double-dose of Southern flavor—from the crunchy praline pieces and the infused creamy base—is why the Maker’s Mark Bourbon Praline remains the number one flavor in our Spirited line. It is a mandatory, staple flavor that all Pecan Jacks locations must carry!

Vice President of Growth and Franchise Development, Cory Mosley, stopped by to chat with Randy shortly after he signed his agreement, discussing his experience from the initial inquiry to joining the team. The Pecan Jacks Difference: Team and Energy For Randy, the decision to join Pecan Jacks was about more than just the product; it was about the people and the culture . "I am amazed at the team environment here," Randy shared. "I'm amazed at how the owners of Pecan Jacks have brought this organization together. It has been an amazing experience . My wife and I are looking forward to becoming a franchise owner and making sure that we grow the brand and continue working with the team." This enthusiasm for our brand culture underscores one of the core principles of Pecan Jacks: building a supportive, family-like network for our entrepreneurs. A Non-Pressured Path to Ownership The journey to franchise ownership can often feel daunting, but at Pecan Jacks, we are committed to a process that is clear, informative, and entirely pressure-free . Randy’s four-month discovery process was guided by our team, focusing on providing him and his wife with all the necessary information to make an informed decision. "The process experience was amazing . I worked with Ken throughout that four-month process time. He was very informative . The meetings were on point," Randy recalled. The most important takeaway for prospective owners? "There was no pressure at all . It was more so giving or providing the information and myself and my wife making the decision whether or not we wanted to join the family."
